Daim Bar Cheesecake

Ingredients

For the base
1 1/1 cups of chocolate digestives crushed up
5 tablespoons of melted butter
2 tablespoons of caster sugar
For the topping
170 grm of  plain chocolate
3/4 cup of double cream
1/4 cup light brown sugar
2 tsp vanilla essence
225g cream cheese
3/4 crushed up daim bars
2 other daim bars crushed


Method

Melt the butter and stir in the crushed up choccie digestives and caster sugar.


Once stirred in pour into a round tin with greaseproof paper lining it. Place in oven for around 10 mins@ 180degrees.



Next place the plain chocolate in a bowl all chopped up. Put half the double cream in a small pan and bring to boil. 
Pour the boiled cream over the chopped chocolate.. and let stand while it melts and then stir. 

In another bowl beat the rest of the double cream, the cream cheese and the sugar and vanilla together. Then pour the cooled chocolate cream mixture over this.
Stir in the first batch of crushed daim bars and pour all of the mix on top of the biscuit base in the tin...then sprinkle the extra two bars over the top.

Leave to set in the fridge for 2 hours.

Serve with cream and a cuppa
